Hospitality management faculty member, Charlie Foster, opens new concept restaurant
July 19, 2010

Charlie Foster, UNT hospitality management lecturer and general manager of the Club at Gateway Center, knows what it takes to run a successful restaurant - market differentiation, great customer value, talented employees, and hard work. With over 30 years of experience in the chain restaurant business, Foster recently opened Ramen Republic located in the booming Denton entertainment district near the corner of Hickory and Industrial streets.

Making healthy food choices is easy for customers who stop by the new business concept.  Foster serves custom noodle bowls with fresh vegetables and toppings such as chopped carrots, celery, corn, and jalapenos- that customers add themselves. The broths are made out of all natural ingredients, are lower in sodium than most broths, and have no added MSG.   "Our chicken is fresh, never frozen and cooked in house daily, and our pulled pork is marinated for 2 days and then roasted for six hours to ensure tenderness," says Foster. Guests also may be surprised not to find any sodas at the restaurant.

Like any pro in the restaurant industry, Foster knows the 'secret ingredient' to success is most likely found in the attitude and work ethic of his 19 full-time and part-time employees.   "I have hired two coaches (managers)-both graduates of the UNT hospitality program- who are responsible for the daily operations and the overall guest experience," says Foster.  "I am lucky to have such a rich and talented applicant pool right in my back door," he adds.   Foster recognizes the added benefits of opening and operating a new restaurant.  "This experience helps me prepare students in our program for their future careers, as I have experienced a lot of new things in opening a small business and by hiring and working exclusively with college students," says Foster.

From boardroom to classroom, and back again. Charlie Foster provides UNT hospitality management students with a real taste of Restaurant Operations 101.
