UNT Celebrates Guest Chef Day with Chef Sascia Marchesi

Guest Chef Day on November 5, 2013 was  a very special day at The Club at Gateway Center.  The Club’s General Manager, Dr. Joseph O’Donnell, invited Sascia Marchesi, Executive Chef and General Manager for the acclaimed Zeppole Coastal Italian Restaurant at the Gaylord Texan Resort and Convention Center, to participate in the program. “We strive to introduce industry professionals into our food and beverage program.  Guest Chef Day provides students the opportunity to collaborate, build relationships, and learn from the best in industry today,” stated Dr. O’Donnell.

Chef Marchesi was born and raised in Milan, Italy and began his love for food while working in his family’s Italian restaurant.  Chef’s passion is creating regionally-inspired dishes with fresh, local, organic and flavorful ingredients.  Marchesi has worked at Alfredo of Rome, located at EPCOT Center in Orlando, Fla.; Walt Disney World; Donatoni’s in the Hilton Waikoloa Village on Hawaii’s Big Island; and Nicola’s Ristorante Italiano in Plano. He has been a guest on local television cooking shows and culinary programs, and has appeared on multiple national networks, including The Disney Channel, ESPN and NBC. Marchesi became the Executive Chef at Zeppole in 2012.    

Chef Marchesi worked with the students to create the following sumptuous meal for Guest Chef Day, including:

Insalata d’ Autunno

A salad with roasted red beets, baby arugula, roasted butternuts, toasted almonds, goat cheese, and pomegranate-white balsamic dressing


Filetti di Pollo alla Piccata

A tenderized chicken breast pan-seared with chardonnay white wine and butter capers sauce, accompanied with broccolini and rosemary-roasted new potatoes


Pannacotta al Caramello

Italian heavy cream custard topped with caramel sauce and fresh berries

Chef Marchesi sent a letter of thanks stating, “It was so much fun to be there with all the UNT team.  You guys make me feel like I am at home, and I can’t wait to do this again.  Thank you for the great opportunity to share my experiences and knowledge with your wonderful students.”

The Club at Gateway Center is an integral part of the educational experience for the Hospitality and Tourism Management Program.  The restaurant is a showcase training laboratory for students enrolled in two restaurant operations courses.  Students learn to run a successful restaurant by practicing fine dining service techniques, management skills, menu planning, financial management, marketing techniques and food production.  It is a premier learning environment for students and a delightful experience for guests. 

Visit Zepolle Coastal Italian for a fresh taste of Coastal Italian in a festive courtyard setting. Celebrate the evening with a selection of unique Italian wines, and traditional Italian cuisine and seafood made from original recipes.  Dress code is casual.  Phone 817-778-2340 for reservations.
