Hospitality and Tourism Management Welcomes Three New Faculty!

Growth in Hospitality and Tourism undergraduate and graduate enrollment has signaled the need for more faculty.  The University of North Texas Hospitality and Tourism Management (HTM) program hired three new faculty members over the summer.  Dr. Lea Dopson, Chair of the program explained, “As the HTM programs grow, we want to maintain the highest quality of students by providing the highest quality of instruction, which includes hiring the best faculty and keeping class sizes at a reasonable level.  On behalf of the faculty, staff and students, we welcome you to the 6th largest program in the nation, the UNT Hospitality and Tourism Management program!”

           Jeff Britain

 

“I am excited to be at UNT and look forward to the future.”  

Jeff Britain was born in Denton, Texas.  His parents met at UNT while they were going to school there.  He graduated from UNT with an undergraduate degree in Political Science and eventually joined the military as a German linguist.  When he left the military, he went to Clemson University to get his MBA degree.  Shortly thereafter, he started working with Waffle House as a unit manager, and he left three years later as a district manager.  Mr. Britain then worked for five years as an owner/operator for Chick-fil-A before he and his wife bought a restaurant in Sherman, Texas.  Later, he worked as a frachise area director for Huddle House, where he helped franchisees make more money by evaluating their profit and loss statements to determine areas of opportunity.  Mr. Britain also worked in the hotel business for a year before becoming a German teacher at Grapevine High School, where he worked for five years.  He was also an Adjunct Lecturer at UNT for four years before being hired as a full-time Lecturer in the Hospitality and Tourism Management program.

 

       Dr. Elliot Dubin

Dr. Elliot Dubin received his Bachelor’s degree from the University of Nevada, Las Vegas in Hotel Administration and his Juris Doctor cum laude from Northern Illinois University, where he developed and taught several courses in lodging and hospitality law.  Dr. Dubin has held many positions in the hospitality industry while working for companies such as Bristol Hotels & Resorts, Davidson Hotels, and Sunstone Hotels.  For these companies he has managed well-known hotel brands throughout the country such as Embassy Suites, Holiday Inn, Sheraton, and Renaissance Hotels.  Dr. Dubin has also worked for Jani King of Illinois, managing the Hospitality Services Division for the state of Illinois and northern Indiana.  In addition, Dr. Dubin worked in the plastic distribution industry in New York and New England, and he had his own general law practice in the state of Illinois.  Dr. Dubin now holds the position of Lecturer in the Hospitality and Tourism Management program at the University of North Texas.  In his free time, Dr. Dubin has travelled extensively both domestically and abroad.

 

  Dr. Joseph O'Donnell

Dr. Joseph O’Donnell has over 40 years of experience in the hospitality industry.  Over the course of those years, he has held numerous leadership positions with off- premise social caterers, stadium caterers, independent restaurants, and large hotel properties.  In addition, he has held various positions with ClubCorp for over 20 years, including executive chef, general manager, and regional manager.  Most recently, he was the academic director for Culinary Arts/ Hospitality Management at the International Culinary School at the Art Institute of Houston.  He likes to highlight the fact that he has been a life-long learner who has completed four degrees as a working adult.  Because of this he has an extremely strong commitment to helping students succeed.
